Hey, Ertsy Fashionistas! If you’ve been reading my blog, you know that I’ve shifted from Delhi to Paris 4 months ago to pursue my higher studies and boy, has it been stressful! If the trauma of transition from India to France wasn’t enough for I had to leave my family, my friends and an entire part of my being back home, I had to deal with the other menaces of the voyage I had committed myself to. It started with the time-zone difference, then there was this beautiful-sounding, frustratingly complicated language, the new culture to adapt to and of course, the food and the changed recipes.
Everything else had left me no choice or option and I started imbibing into it quite wilfully but food, well, I’m just so glad I know how to cook. The difficulty, however, is the paucity of time. Now, I understand that a lot of you students and even young professionals face the same ordeal as I do. There are also some who just couldn’t spare much time or even interest to learn how to cook. And you know what, that’s okay, you got better things to worry about.
So, I have straightened out my own curated some recipes of 5 absolutely delicious and very adaptable dishes that are ready to serve in under 10 minutes. I’ve had utmost fun experimenting with these to make them as concise as possible and hope to pass it on to you, too. And just by the way, these are optimum in calorie intake and are desirable if you’re even slightly health conscious.
1) Eggs on Muffin:
Heat a pan over medium heat and spray on some oil. Scramble an egg, add salt & pepper, cook it to desired consistency but not over five minutes. Top it with a just a dash of creamy cheese and let it melt. Toast a whole-wheat muffin or bread and top your egg and cheese on it. If you fancy some meat, add a slice of cooked bacon.
2) Cold Pizza:

No, it isn’t the takeout kind, you got to work. 😛
Add 2tbsp. ricotta, basil leaves, and two round-chopped tomato slices on a well toasted whole-grain bread. Add salt, pepper and a drizzle of olive oil when serving. If you like, add some mozzarella, too!
3) Taco Salad:

Simply dress the Tacos with 1 tbsp. low-fat Greek yogurt, 2 tbsp. salsa, 1 tsp. olive oil, and 1 tsp. chilli powder. Serve dressing over a salad with: 2 cups baby spinach, ½ thinly sliced celery stalk, 1 chopped scallion, 1 tbsp. chopped black olives, 2 tbsp. corn, and ¼ cup drained and rinsed black beans. If you fancy, add ½ lightly toasted tortilla cut into strips to each salad.
4) Cheese and Dried Tomato Omelette :

Coat a tbsp. of oil in a pan and let it heat on medium-high. Batter 3 eggs with 1tsp. of water, salt and pepper. Once the pan is heated, pour it in and let it set for a minute. Add a dash of goat cheese/mozzarella, ½ cup fresh basil, and 2 tbsp. chopped sun-dried tomatoes.Add Chutney or pesto sauce if you please. Fold in half and cook for until egg batter is completely set and cheese has melted.
5) Mango Quesadillas:

Add 2 slices deli ham or bbq Chicken, 1/8 cup crumbled queso fresco or feta cheese, and 1 tbsp. scallion (chopped) to an 8-inch, whole-wheat tortilla spread with 1/8 serving of a cup mango chutney. Fold in half and grill/toast it for 2 to 3 minutes on each side. Cut into quarters and serve.
